Mt. Mazama or Echo Mountain Blue Cheese Ball Pops

Mt. Mazama and Bacon Cheese Ball Pops Ingredients

6 oz. cream cheese

4 oz. Mt. Mazama Cheddar, shredded (about 2 cups)

¼ c. finely crumbled crisp cooked bacon

2 tbsp. green onions, thinly sliced

1 tsp. grainy mustard

½ tsp. Worcestershire

a few drops of hot sauce, to taste

1/3 c. pecans, finely chopped

1/4 c. parsley, minced

Preparation

Whip cream cheese until smooth in a large bowl or stand mixer. Add the rest of the ingredients except pecans and parsley. Chill for at least 1 hour or, preferably, overnight to allow flavors to meld. In a medium bowl, combine pecans and parsley. Form cheese mixture into 1” balls and roll balls into pecan mixture to coat. Serve immediately or refrigerate up to 24 hours.

 


Echo Mountain Blue and Dried Cranberry Cheese Ball Pops Ingredients

8 oz. cream cheese

3.5 oz. Echo Mountain Blue

1 tsp. lemon peel, minced (1/2 tsp. dried)

1 tsp. honey

2/3 c. dried cranberries, divided in half

1/3 c. pecans, finely chopped

 

Preparation

Whip cream cheese until smooth in a large bowl or stand mixer. Add the rest of the ingredients except pecans and parsley. Chill for at least 1 hour or, preferably, overnight to allow flavors to meld. In a medium bowl, combine pecans and parsley. Form cheese mixture into 1” balls and roll balls into pecan mixture to coat. Serve immediately or refrigerate up to 24 hours.

*Flash freeze on a cookie sheet or plate, then transfer to a freezer safe container for up to one month. Remove from freezer and defrost in the refrigerator for six hours before serving.
